STEP #1: Make SCOBY aka “the mother”


This first step takes between 1 - 4 weeks.


The SCOBY (Symbiotic Culture Of Bacteria and Yeast) is the mother of the kombucha, and it provides bacteria and yeast to help in the tea fermentation process. It also provides a loose seal that keeps a bit of the carbonation in, and protects the tea from outside contaminants. 


SCOBY is the very essence of kombucha, without it there is no flavor and no magic!

STEP #2: First fermentation

STEP #3: Second fermentation
