Fermented Beets With Thyme

If you’re a fan of deep, rich, and earthy flavors, this Fermented Beets with Thyme recipe is perfect for you! Beets are naturally sweet and earthy, and when combined with the herbaceous flavor of thyme, they create a delightful blend that’s both satisfying and packed with probiotics. Whether you’re new to fermentation or a seasoned pro, this simple recipe is a must-try. 

Why Ferment Beets?

Fermenting beets enhances their natural flavors while adding a tangy twist. Not only do fermented beets taste amazing, but they are also packed with beneficial probiotics that support gut health. The combination of beets and thyme offers a balance of sweetness, earthiness, and herbal notes, making this recipe a perfect addition to your meals as a side dish, charcuterie board, salad topping, or snack!


Ingredients:

  • 3 medium-sized beets (you can use red beets and golden beets for even prettier look!)
  • 1-2 sprigs of thyme
  • 4-5 peppercorns
  • 1 cup dechlorinated water
  • 1 tsp iodine-free salt (we used sea salt)

Instructions:

  1. Scrub your beets really well or peel them.
  2. Slice them into bite-sized cubes and add to your empty Mason jar.
  3. Add thyme and peppercorns.
  4. Prep the brine by stirring 1 cup of water with 1 tsp od salt. Pour it over your beets, leaving 1.75” headspace inside the jar.
  5. Place the Pickle Pebble into the mouth of the Mason jar so it’s slightly submerged and the beets are weighted down below.
  6. Lastly, secure the Pickle Pipe under the Tough Band and leave it to ferment in a cool and dark place, like your kitchen cupboard for 2-10 days.

 

Enjoying Your Fermented Beets! 

Once your beets have fermented to your liking, remove the Pickle Pebble and Pipe, replace them with a regular Maosn jar lid like our Tough Tops and store the jar in the fridge.
