This delightful and savory ferment is the perfect snack. Loaded with flavor, a bit of heat and a salty brine, it satisfies cravings and is a healthy alternative to other late night temptations (*cough* chips *cough*). Best of all, it's loaded with probiotic goodness that will make your tummy smile. 

This recipe is on the saltier side, so feel free to reduce the salt a bit to lower the sodium. The jalapeños will lose their hotness the longer they're fermented, but if you can't handle spice, remove the seeds to reduce the heat.

Tools

Vegetables

  • 3 jalapeños, thickly chopped 
  • 1 onion, quartered and separated 
  • 3 - 4 large carrots, thickly chopped 

Brine*

  • 3 tbsp kosher/coarse salt (learn more about choosing your salt here)
  • 3 cups dechlorinated water (learn how to dechlorinate water here)

Instructions

  1. Pour 3 cups of water into a measuring cup and stir in salt to create your brine.
  2. Place your vegetables inside the Mason jar, lightly tamping them down with a Pickle Packer to reduce air pockets. 
  3. Pour the brine over the vegetables, leaving 1.75" headspace.
  4. Place your Pickle Pebble on top of the vegetables, ensuring it's slightly submerged and weighting down the vegetables below the brine; remove or re-submerge any veggies or seeds that float to the top. 
  5. Place your Pickle Pipe on the mouth of the Mason jar and secure it with a screw band.
  6. Leave in a cool, dark place to ferment for 1 - 2 weeks; start tasting it after 5 days. Store in fridge once satisfied with the results. 

This recipe is a great starter for beginners: it's easy and delicious. We usually ferment this recipe for 8 - 9 days, but that will change depending on ambient temperature (it will ferment faster in a warmer environment) and your personal taste.
